For March, our pastry team went through one of the longest flavour request lists we’ve yet to encounter. From there, we picked out two throwbacks and harmonized popular flavours together to bring you three new macarons. The last flavour was inspired by the Korean daeji bar ice cream (which literally translates to Piggy Bar), a nostalgic treat for many of us, and something our pastry chef wanted to create for a while!

—  Honey Date  —

Buttercream with whole dates cooked in syrup and pureed, with honey caramel in the center. Toasted honey walnuts on the outside.

— Piggy Bar  —

Inspired by a Korean ice cream bar of the same name, milk ice cream-flavoured buttercream with house-made strawberry jam in the center, dipped in chocolate and wrapped in a mix house-made chocolate and peanut crumbles.

—  Coconut Latte —

Coconut anglaise and espresso pâte à bombe swirled together around a coffee ganache, wrapped in shredded coconut around the sides.

—  Birthday Cake  —

Vanilla funfetti cake with white chocolate cream cheese frosting. Sprinkles on top!

—  Strawberry Lemon Cheesecake  —

Strawberry-lemon buttercream, freeze-dried strawberry, a slice of house-made lemon cheesecake and chunks of graham cracker crumble.

—  Mango Passionfruit  —
